Care for an enamel braiser is straightforward. Wash it with warm water and regular dish soap. There is no seasoning or oiling required, and wire scrubbers should be avoided.

For stubborn residue, soak the pan briefly before washing. The enamel is stain-resistant, so most cooking residue can be removed without aggressive scrubbing.

Let a very hot pan cool before adding cold water. Wooden or silicone utensils are recommended. The enamel surface does not rust, so there is no need to oil the pan before storage.

How to Use Your Braising Pan – Sear, Deglaze, Simmer

Braising uses four simple steps, all in the same braising pan.

1. Sear. Preheat over medium heat for 2–3 minutes. Add a spoonful of ghee or oil, then brown the meat or paneer in a single layer without crowding the pan.

2. Fry the masala. Add onions, ginger-garlic, tomatoes and spices to the same fat. Scrape the browned bits from the base as the masala cooks.

3. Deglaze and add liquid. Add stock, water, curd or coconut milk until the liquid comes partway up the food rather than covering it completely.

4. Lid on, flame down. Bring it to the lowest simmer and cook for 40 minutes to 2 hours. Remove the lid for the final 10 minutes if you want to reduce the gravy further.
