Golden Onion Uttapam

Soft, fluffy uttapams with beautifully crisp golden edges and a generous topping of sweet onions, fresh coriander, and green chilli; comforting, satisfying, and perfect for slow breakfasts or easy South Indian style meals. Prepared on the Cumin Co. No 11 Enamel Cast Iron Dosa Tawa, these uttapams cook evenly while developing crisp bases and tender, airy centres.

Ingredients

  • 2.0

    cups idli or dosa batter

  • 2.0

    small onions, finely chopped

  • 1.0

    green chilli, finely chopped (optional)

  • 2.0

    tbsp fresh coriander leaves, finely chopped

  • 2.0

    tbsp oil or ghee

  • Salt, if needed

  • 1.0

    tbsp grated carrot

  • 1.0

     tbsp finely chopped tomatoes (seeds removed)

Method

  1. In a small bowl, combine onions, green chilli, coriander leaves, and optional carrot or tomatoes if using.

  2. Taste the batter and adjust salt if needed. The batter should be thick yet pourable.

  3. Preheat the Cumin Co. No 11 Enamel Cast Iron Dosa Tawa over low medium heat.

  4. Lightly grease the surface with a few drops of oil or ghee.

  5. Pour a ladleful of batter onto the tawa and gently spread slightly to form a thick uttapam. Do not spread too thin.

  6. Immediately sprinkle the onion mixture generously over the top and press lightly so the onions settle into the batter.

  7. Drizzle ghee or oil around the edges and lightly over the top.

  8. Cover and cook on low medium heat for 2 – 3 minutes until the base turns golden and crisp.

  9. Carefully flip using the Cumin Co. Silicone Spatula and cook the other side for 1 – 2 minutes until lightly golden and cooked through.

  10. Repeat with the remaining batter.

Serving suggestions

Serve hot with coconut chutney, tomato chutney, and sambar served in Cumin Co.  Ceramic  Ceramic Mini Cocottes for a comforting South Indian style meal. For extra indulgence, drizzle a little melted ghee over the uttapam just before serving.

Cumin Co. Expert Tip

Sprinkle the onions immediately after pouring the batter and press them in lightly. This helps them cook through properly and prevents them from falling off while flipping.

Cleaning & care guide
