Dhaba-Style Missi Roti

A rustic Punjabi flatbread made with a mix of wheat and gram flour, spiced with onions, ajwain, and green chillies kneaded right into the dough. Denser and more flavourful than a regular roti, it needs no side dish to shine on its own. Cooked on the Cumin Co. Tawa, it turns out crisp edged with a distinctly nutty, savoury bite.

Ingredients

    cup whole wheat flour (atta)

    cup besan (gram flour)

  • 1.0

    small onion, finely chopped

  • 1.0

    green chilli, finely chopped

  • 0.5

    inch ginger, grated

  • 2.0

    tbsp fresh coriander, chopped

  • 0.5

    tsp ajwain (carom seeds)

  • 0.5

    tsp red chilli powder

  • 0.25

    tsp turmeric (haldi) powder

  • 0.25

    tsp garam masala

  • 1.0

    tbsp oil, plus extra for cooking

  • Salt, to taste

  • Water, as needed

Method

  1. In a Mixing Bowl, combine wheat flour, besan, onion, green chilli, ginger, coriander, ajwain, red chilli powder, turmeric, garam masala, oil, and salt.

  2. Gradually add water, kneading into a firm but pliable dough — besan makes it slightly stiffer than a regular roti dough, so knead a little longer to bring it together smoothly.

  3. Cover and rest the dough for 15 minutes.

  4. Divide into equal portions and roll each into a ball. Dust with flour and roll out into a thin, even round, dusting as needed to prevent sticking.

  5. Heat the Cumin Co. No 10 Enamel Cast Iron Roti Tawa over medium heat. Place the rolled roti on it once hot.

  6. Cook until small bubbles appear on the surface, then flip.

  7. Drizzle a little oil on the cooked side, flip again, and press gently with the Cumin Co. Silicone Spatula at the edges to help it puff and cook evenly.

  8. Cook both sides until golden brown with crisp, darkened spots.

  9. Remove and serve hot.

Serving suggestions

Serve with a dollop of white butter, plain curd, or mango pickle pickle served neatly in Cumin Co. Ceramic Mini Cocottes. Pairs especially well with a cup of hot masala chai.

Cumin Co. Expert Tip

Rest the dough for the full 15 minutes before rolling since besan tightens up the gluten strands from the wheat flour, and skipping the rest makes the roti shrink back and turn uneven as you roll it.

Cleaning & care guide
