Ingredients

  • 1.0

    cup split red lentils (masoor dal)

  • 3.0

    cups water, for soaking

  • 1.0

    green chilli

  • 1.0

    inch ginger

  • 1.0

    tsp salt

  • 0.5

    cup water, for grinding (adjust if needed)

  • 2.0

    tbsp fresh coriander, finely chopped

  • 2.0

    tbsp oil or ghee, for cooking

Method

  1. Rinse the masoor dal thoroughly until the water runs clear. Soak for at least 4 hours or overnight.

  2. Drain completely and transfer to a blender.

  3. Add green chilli, ginger, salt, and water. Blend into a smooth, pourable batter.

  4. Transfer to a Mixing Bowl and stir in chopped coriander. Allow the batter to rest for 5 minutes.

  5. Heat the Cumin Co. No 11 Enamel Cast Iron Dosa Tawa over low medium heat. Lightly grease the surface with oil or ghee.

  6. Pour about ⅓ cup batter onto the tawa and gently spread into a thin 5 – 6 inch circle using the back of a ladle.

  7. Drizzle a little oil or ghee around the edges.

  8. Cook for 2 – 3 minutes until the edges begin crisping and the underside turns golden with light brown spots.

  9. Carefully flip using the Cumin Co. Silicone Spatula and cook the other side for 1 – 2 minutes until lightly golden and cooked through.

  10. Repeat with the remaining batter.

Serving suggestions

Serve hot with coriander chutney, garlic curd dip, or spicy tomato chutney served in Cumin Co. Ceramic Mini Cocottes. Pair with masala chai and a fresh kachumber salad for a wholesome breakfast or comforting light meal.
