A simple, buttery classic — bread and cheese, toasted until golden and crisp on the outside with a fully melted centre. No fuss, ready in minutes, and endlessly comforting. Cooked on the No. 11 Enamel Cast Iron Dosa Tawa, it turns out evenly golden with a satisfying crunch in every bite.
Place the sandwich on the tawa and cook for 2 – 3 minutes until the bottom turns golden brown.
5
Flip carefully using the Cumin Co. Silicone Spatula and cook the other side until golden, pressing down gently to help the cheese melt fully.
6
If the cheese hasn't fully melted by the time both sides are golden, lower the heat further and cover with a lid or plate for a minute to trap heat and finish melting the centre.
7
Remove, sprinkle with chilli flakes and oregano if using, and slice diagonally.
Cook on low-medium heat, not high — grilled cheese needs time for the inside to melt fully before the bread over-browns. If the outside is golden but the centre is still firm, the heat was too high.
Cleaning & care guide
Wipe the tawa with a dry cloth while still warm; melted butter and cheese residue lift off far easier before the tawa fully cools.
