Ingredients

Chocolate Base

  • 45 g dark chocolate (55%–70%)

  • 30 g butter

  • 1 egg (use ½ beaten egg ≈ 25 g)

  • 2 tbsp sugar

  • 1 tbsp flour

  • Pinch of salt (optional but enhances chocolate)

Center (Optional)

  • 15–20 g chocolate chunk

Method

1. Melt Chocolate & Butter

  • In the mini cocotte (stove on low or double boiler), melt until smooth and glossy.

  • Let cool 1 min.

2. Mix Egg & Sugar

  • Add sugar → whisk.

  • Add half a beaten egg (~25 g) → whisk until thick and shiny.

3. Add Dry Ingredients

  • Fold in flour + salt gently.

4. Assemble

  • Pour half the batter into the cocotte.

  • Place a chocolate chunk in the centre.

  • Cover with remaining batter.

5. Bake

  • Oven: 190°C

  • 8–10 min until edges are set, top slightly crinkly, centre wobbly.

  • Remove at slight dome + jiggle.

6. Serve

  • Enjoy hot directly from the cocotte!
